KEYSTONEThese guides will ensure you are ready to go!1 SHIVEPlace the firkin on the floor so the keystone is facing upwards.With the tap closed, position the tapered end of the tap over the centre of the rubber keystone and strike firmly with a mallet to ensure the tap is wedged firmly into place. Try to do this with one confident whack!!Dont have a mallet? Then this is where we would suggest a hammer with a piece of wood in between it and the tap to prevent damage2Place the firkin LEVEL on the floor with the shive upwards.(Ideally this step is done where you plan on storing the beer) Take the SOFT PEG and position the narrow end against the central plastic part (tut) of the shive. Being careful not to hit your fingers, strike the spile with a mallet. The spile should force the plastic tut into the beer and will wedge into the shive. A small amount of beer may seep out through the end grain of the spile. This is perfectly normal. REMEMBER soft pegs allow the beer to breathe.This is an essential step so keep an eye on them so they dont get blocked.Replace with a clean peg if this happens. This step should take around 24 -48 hours3Getting ready to serve! If your beer is bright then you should be ready to go but just to be sure partially open the tap and pour a 1/2 pint to release any excess pressure in the cask. If your beer is Rough, check you are happy with its clarity and then insert a HARD PEG until you are ready to serve.A hard peg means that no gas is allowed in or out of the cask.REMEMBER Once the beer is settled do not move it.Beer does not resettle well and you will likely mix air in and ruin it4Sample before serving. Always sample from the cask (Quality control has its perks!) therefore not drawing too much beer into the lines thus causing waste.When youre happy and readt to serve the beer, simply remove the spile with a set of pliers and start pouring.If there is any beer left in the firkin at the end of the session replace the spile5Chill out! The beer is best stored and served at 10-12 C. To keep it at this temperature, store in a cool garage or outhouse.
